This recipe started as refined sugar free recipe from the good Folks at insert Blog name here. It was a brilliant idea, but I wanted to push it a little further, and make it fully sugar free. Now, everybody has a little bit of a different opinion of what natural sweeteners constitute sugar and what natural sweeteners do not constitute sugar.
I used to make this recipe with agave and it did taste good. I read this article on how Agave that we find in the store is not the low glycemic index sweetener we want to believe! I know everyone is different, and you can’t always believe everything you read… So if you are using Agave yourself, I suggested in this recipe! It goes rather well!
However, for myself after the article I read, I decided to stop using agave. And this recipe I use Stevia and a small amount of Yacon syrup.
It is amazing!
I’m also a bit of a gluten free nut! Soooo, if you don’t care about gluten, just use your favorite all-purpose baking flour!
Here it is, the amazing cookie pie!
Pro tip: if you have some family members who eat a bunch of junk that you don’t want eating up all your tasty healthy dessert, just tell them it is sugar free and gluten free. They will assume it is nasty! The joke’s on them though, because it is amazing! Even my very picky dad with a mega sweettooth loves this recipe!
1/2 cup gluten free flour
1/4 cup tapioca flour
1/4 cup coconut flour
1tsp baking powder
1tsp baking soda
1/8 tsp salt
12tbs coconut oil
1/2 large ripe avocado
2tbs Yacon syrup
3 tsp Stevia
1/2 tsp vanilla
3/4 cup grain sweetened dark chocolate
Preheat oven to 350°F
Grease 8″ pie dish with coconut oil, or oil of choice.
Combine all dry ingredients except chocolate chips. Mixwell soda baking soda and baking powder are evenly distributed.
Mix in all wet ingredients, the order doesn’t matter, just make sure they are thoroughly mixed. Then fold in the grain sweetened chocolate chips.
Bake at 350 for 20 minutes!
